Chocolate trays

A handy tool for making galettes is a chocolate draw tray. Place a sheet of baking paper and place the draw tray on it. Fill the container of the draw tray with liquid chocolate and then slide the container back and forth over the draw tray. The holes in the draw tray fill with chocolate and when the draw tray is removed from the baking paper, nice round and even galettes remain on the baking paper. This works faster than filling a shape separately each time and so multiple galettes can be made at once.
